How to Make Cajun Shrimp Mac and Cheese
Step 1: Prepare the Shrimp
In a skillet, melt 1 tablespoon of butter over medium heat. Add the shrimp and ½ teaspoon Cajun seasoning. Cook until the shrimp turns pink, about 3 to 5 minutes. Set aside.
Step 2: Cook the Pasta
Boil water in a large pot. Cook 1 pound of pasta until al dente, about 8 to 10 minutes. Drain and set aside.
Step 3: Make the Cheese Sauce
In a pot, melt 4 tablespoons of butter over medium heat. Add 4 tablespoons of flour, whisking for 1 minute until slightly browned. Slowly whisk in 3 cups of milk and bring to a simmer. Gradually add 9 ounces of Pepper Jack and 6 ounces of cheddar cheese, stirring until melted. Season with ½ teaspoon Cajun seasoning, salt, and pepper.
Step 4: Combine Pasta and Shrimp
Add the cooked pasta and shrimp to the cheese sauce. Stir until well combined and evenly coated.

Step 5: Prepare the Topping

Step 6: Assemble and Bake
Preheat your oven to 400°F (200°C) and butter a 9×13-inch casserole dish. Pour the pasta and shrimp mixture into the prepared dish, spreading it out evenly. Sprinkle the top with 3 ounces of shredded Pepper Jack cheese and 2 ounces of shredded sharp cheddar cheese. Finally, spread the Panko breadcrumb mixture over the top.
